Rhubarb Crumble

So the good news is that mum had a recipe tucked away in her box of recipes in the cupboard – the bad news is that i took so few pictures ( because of messy hands), the few i had to choose from are dull and boring! You’ll just have to make do with the one of the chopped rhubarb looking like turkish delight pieces & next time i’ll try and do a better job!

Serves: 4

FILLING
400g rhubarb
75g caster sugar
2 teaspoons cornflour

CRUMBLE
100g cold butter (unsalted)
150g plain flour
50g caster sugar

METHOD

1. Oven to 200ºC & grease dish.

2. Chop the rhubarb into small pieces, mix with sugar and cornflour, then add to dish.

3. For crumble, chop butter, add flour, use fingertips to rub the butter and flour together till it resembles breadcrumbs. Stir in the sugar and a pinch of sea salt.

4. Tip the crumble mixture over the rhubarb & bake for 35 to 40 minutes, or until golden and bubbling. Serve with hot vanilla custard or cold cream.

 

This turned out pretty delicious & will be making it again!
